Hola! Doesn’t the simple thought of Cinco de Mayo put you in the mood for a Margarita and guacamole dip? This is one of my favorite fun days. In early May, the weather can still be chilly, depending on where you live but a Cinco de Mayo party offers the first glimpse of the warm summer nights and many fiestas to look forward to.

Serve Some Authentic Mexican Food at Your Cinco De Mayo Party

The Guac That Rocks Guacamole Dip

Guacamole Dip

3 Haas avocados, halved, seeded and peeled
1 lime, juiced
1/2 teaspoon kosher salt
1/2 teaspoon ground cumin
1/2 teaspoon cayenne
1/2 small onion, diced
1 jalapeno pepper, seeded and minced
2 Plum tomatoes, seeded and diced
1 tablespoon chopped cilantro
1 clove garlic, minced (optional)

Combine all ingredients and serve with chips

Cheesy Chicken Enchiladas (Serves 8)

Chicken Enchiladas

1 tablespoon olive oil
2 cooked chicken breasts, shredded
1 each onion and green pepper, diced
1 1/2 cloves garlic, chopped
1 cup cream cheese
1 cup shredded Monterrey Jack cheese
1 (15 ounce) can tomato sauce
1 tablespoon each of chili powder and Parsley
1 teaspoon dried oregano
1/2 teaspoon each of salt and pepper
8 (10 inch) flour or whole wheat tortillas
2 cups enchilada sauce (prepared from Grocery Store)
2 cup shredded Monterrey Jack cheese or Mexican Blend

Directions
Preheat oven to 350 degrees.

Heat olive oil in a skillet over medium heat, add the shredded cooked chicken, chopped onions and green pepper, garlic, cream cheese, and 1 cup Monterrey Jack cheese until melted and creamy. Stir tomato sauce, chili powder, parsley, oregano, salt, and black pepper into the skillet

Divide mixture evenly into tortillas, roll them up and arrange in a baking dish. Cover with the enchilada sauce and remaining cup of Jack cheese.

Margaritas on the Rocks

1 bottle(s) (750-milliliter) silver tequila
1 cup triple sec or Cointreau
1-1/2 cups fresh squeezed lime juice
Lime wedges
Coarse salt
Crushed Ice

Directions

Mix the alcohol with the lime in a serving pitcher and chill until ready to serve.
Rub the rim of a Margarita, Martini or Highball glass with a lime wedge then dip in kosher salt to create a salted rim. Fill glasses with ice then pour in your Margarita.  Garnish with lime slices and a slice of Jalapeno.
